We help you eat – and love – your vegetables.

Our Food: Flavorful. Nutritious. Convenient.

At Plantiful, we specialize in making plant-based food delicious, nutritious and accessible! Dine in at our cafe in historic uptown Mount Vernon. Grab a ready-to-eat salad, wrap, grain bowl and/or snack from our Fresh To Go Cooler. Or stock up on prepared meals at home with our monthly meal subscription service!

Our Difference: From Plant-based to Plant-iful

We go a step beyond “plant-based” by making sure that each and every dish we make is FULL of fresh, whole foods! You won’t find processed “fake” meats, cheeses or eggs in our Plantiful food. You WILL find dishes that are bursting with flavor, color, texture and energy.

BONUS: Most of our food is naturally gluten-free, and all of our food is dairy and egg-free. When possible, we will try to accommodate additional food allergies.

Our Mission: Caring for Our Community

The driving force behind The Plantiful Pantry is to make a difference in our community. We not only want to provide delicious healthy food options in the area, but to use food to make deeper connections with community members.

We care for those with less access. At the forefront of our mission is a commitment to making sure healthy food is accessible to all. We are closely aligned with the Southeast Linn Community Center, which aids economically disadvantaged, children and senior citizens of Mount Vernon and Lisbon. Each week, we donate meals to their Self Serve Cooler. Each month, we sponsor one family with a FREE meal subscription.

We care for local farmers. Throughout the year, we work with several farmers in the Mount Vernon area to incorporate locally grown and seasonal produce and herbs into our menu. Designed to change weekly, our menu allows us to adjust very quickly to what produce is harvested week-by-week.

Finally, we care for the earth by providing our meals in compostable containers and sourcing from as many local suppliers as possible. This not only reduces energy use and carbon emissions, but supports regional businesses and coops.

In the food industry, teams can often fluctuate. And Team Plantiful is no exception. But we honor the many beautiful souls who’ve made our organization what it is today. Our current team includes Marty McDonald, Megan Pospisil, Maddie Hall and Alaina Pospisil. Each member contributes their own unique passions, talents and skills that allow us to care for our community – and for each other.

The team is led by Mariah Andrews, who founded the company in late 2020. Plant-based for all of her adult life, Mariah’s dream was to make healthy eating delicious – and accessible to as many people as possible.
